3 large eggs
1cup sugar
1/2 cup cooking oil
1 teaspoon vanilla
1 1/4 cup sifted all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
4 apples, peeled, cored and sliced
1/2 cup apricot
jam
juice of
1/2 lemon
Beat the
eggs well. Mix in sugar a little at a
time. Add the oil and vanilla. Mix flour, baking powder and salt and fold
into the egg mixtures. Cover the bottom
of a greased and floured pan with 1/2 of the mixture. Mix apples with jam and lemon juice and
spread over the batter. Cover with the
remaining batter. Bake for 1 hour at 350
degrees. sharing family memories and recipes.
